  • 1kg madeira cake mix
  • 144g butter or margarine
  • 400g water
  • Macphie Rainbow Frosting
  • Macphie 5th Avenue Icing


  1. Add the butter and cake mix to a mixer and mix on slow speed for 1 minute

  2. Add the water and mix for another minute on slow speed then scrape down. Continue mixing for a further 4 minutes on middle speed, followed by 1 minute on slow speed
  3. Place 50g into muffin cases and place on a baking tray
  4. Bake at 180°C for 30 minutes
  5. Once baked, leave to cool before decorating with the icing and frosting
