Muesli Breakfast Biscuits

  • Butter 100g softened
  • Golden caster sugar 25g
  • Egg yolk 1 medium
  • Oats 50g
  • Oatmeal 25g
  • Wholemeal plain flour 75g
  • Baking powder ½ tsp
  • Dried apricots 25g chopped
  • Sultanas 25g


  1. Preheat the oven to 160°C, gas mark 3 and line 2 baking trays
  2. Cream the butter and sugar together. In a separate bowl, mix together the remaining ingredients and add to other
    mixture to make a dough. Chill in the fridge for 10-15 minutes
  3. Cut 12 biscuits in a 22x16cm rectangle and bake for 15-20 minutes. Leave to cool before serving
