Cooking time: 50 minutes



  • 50g butter
  • 12 gluten-free digestive biscuits
  • 25g sugar
  • 1 tsp cinnamon
  • 2 large eggs
  • 25g sultanas
  • 40g sugar
  • 200g cottage cheese
  • 200g cream cheese
  • Squeeze of lemon juice
  • Ground nutmeg, to taste


  1. Melt the butter then add the crushed biscuits, sugar and cinnamon
  2. Mix well and press into a tin
  3. Mix all the other ingredients together and pour over base. Bake at 180oC for 40-50 minutes until set

  4. Cool before serving

  5. Serve with cream and fresh fruit
