What’s New Sept-Oct
Allergy UK has launched an accreditation scheme for foodservice operators that aims to ‘put peace of mind on the menu’ for the estimated two million people in the UK who suffer from food allergies. Under the Allergy Aware scheme, businesses are required to sign a charter to ensure best practice and compliance and then receive training from providers Allergy Aware Kitchen before they can be accredited. Catering businesses join for an initial 12 month period, then renew annually. As part of the scheme, all successfully accredited businesses receive a listing on Can I Eat There? – an online restaurant and menu directory for the allergic and coeliac community.

The UK’s number one mint out of home, POLO®, is going solo. The individually wrapped POLO® sweets come in both refreshing clear mint and five fruit flavours: blackcurrant, orange, lemon, lime and strawberry providing some variety to the complimentary market. And with research by OnePoll for Nestlé Professional® saying just under one in five people would be more likely to tip when offered complimentary mints at the end of a meal in a restaurant, the new POLO® presents a big opportunity to reassure consumers on the quality of their experience and play a subtle, but important, role in encouraging them to leave positive reviews. “Providing that little extra clearly goes a long way in leaving a positive lasting impression on both hotel guests and diners,” said Anu Christie-David, Nestlé Professional® sweet food category manager. The new individually wrapped POLO® sweets are available from your wholesaler now in cases of 6 x 660g bags.

Skyr’s the Limit
A Yorkshire Dales farmer has become the first in Britain to make a healthy Icelandic-style super yoghurt, which is naturally high in protein and calcium but has zero fat and low sugar. Sam Moorhouse, 22, officially launched Hesper Farm ‘Skyr’ at the Harrogate Fine Food Show, attracting huge interest from the hospitality and catering industry professionals in attendance. Skyr (pronounced skeer) has really taken off in America, having previously been one of Scandinavia’s and Iceland’s best kept secrets. Made with around four times as much milk as traditional plain yoghurt, Skyr’s thick and creamy texture makes it ideal for businesses wanting to offer guests something different – and is a perfect accompaniment to fruits and granolas on a breakfast buffet. Available in Original, Strawberry, Vanilla and Blueberry as well as seasonal limited editions from www.hesperfarmskyr.co.uk
Attracting a lot of interest is Winejellar – a jam-like combination of wine or cider, sugar and pectin that offers chefs an extremely versatile cooking ingredient or food accompaniment. The port wine jelly goes with blue stilton type cheeses and dark meats such as venison; cider jelly with vintage cheddars and pork; red wine jelly with mature cheeses and red meats and rosé with soft cheeses, white meats and summer fruits.
